Easy Gulgula Recipe | Traditional Indian Dessert with Jaggery

Gulgula

Gulgula is a traditional Indian sweet snack, typically enjoyed in northern parts of the country. These deep-fried, golden-brown fritters are made from a simple batter consisting of wheat flour (atta) or water chestnut flour, jaggery or sugar, and a few basic spices like fennel seeds and cardamom for added flavor.

The batter is mixed until smooth and allowed to rest briefly before being dropped in small spoonfuls into hot oil. As they fry, the gulgula puff up and take on a beautiful, slightly irregular shape. The result is a crispy exterior with a soft, fluffy interior, and a sweet, subtly spiced flavor.

Main Ingredients:-
Singhare ka Atta ( Water Chestnut Flour ) - 1 cup
Milk - 150 ml
Jaggery Powder - 5 tbsp
Cardamom Powder - 1/2 tsp
Ghee (Clarified Butter) for deep frying

Serves - 4-5

Procedure:-


Prepare the Batter:
In a mixing bowl, combine Singhare ka Atta, jaggery powder, and cardamom powder.
Gradually add milk to the dry ingredients, stirring continuously to form a smooth batter.
Ensure there are no lumps.

Rest the Batter:
Cover the bowl with a lid and let the batter rest for 30 minutes.
This helps the jaggery to dissolve completely and the flour to absorb the milk, making the batter smooth and consistent.

Heat the Ghee:
In a deep frying pan, heat clarified butter (ghee) on medium heat.
Ensure there is enough ghee for deep frying.

Fry the Gulgulas:
Once the ghee is hot, use a spoon or your hands to drop small portions of the batter into the hot ghee.
Fry the gulgulas until they turn golden brown and crispy on all sides.
Make sure to turn them occasionally for even cooking.
Remove the fried gulgulas using a slotted spoon and drain excess ghee on paper towels.

Serve:
Serve the Singhare ka Atta ka Gulgula hot or warm.
They can be enjoyed as a snack or dessert.
