Spicy Onion Tomato Bhaji


 

Main Ingredients:-
Onion - 250 gm
Green Chilli - 100 gm
Tomato - 250 gm
Coriander - 20 gm
Turmeric Powder - 1 tsp
Salt - as per taste
Mustard Oil - 4 tbsp
Cumin Seeds - 1 tsp

Serves - 3-4

Methods:-


Heat the Oil:-
In a large pan or skillet, heat the mustard oil over medium heat.

Add Green Chilli:-
Once the oil is hot, add the green chilli and let them crackle.

Sauté Onions:-
Add the sliced onions and sauté until they turn golden brown.
This should take about 8-10 minutes.

Cook the potato :-
Bring a large pot of water to a boil.
Add the potato in batches, cooking them until they float to the surface, about 2-3 minutes.
Remove them with a slotted spoon and dip into a cold water.

Cook Tomatoes:-
Add the chopped tomatoes and mix well.
Cook until the tomatoes become soft and mushy, stirring occasionally.
This should take about 5-7 minutes.

Spice it Up:-
Add the turmeric powder and mix well and cook for another 2-3 minutes until the spices are well incorporated and the oil starts to separate from the masala.

Season with Salt:-
Add salt to taste and mix well.
Cook for another 2-3 minutes to ensure the flavors are well blended.

Garnish and Serve:-
Garnish with freshly chopped coriander leaves.
